Ingredients
For mushrooms:
300 g button mushrooms
As salt to taste
1-2 tablespoons ghee
1/2 teaspoon butter
For Shahi hot spices:
1-2 sticks of cinnamon
1 tablespoon royal cumin
1/2 teaspoon cumin
1 tablespoon chilli
10 grams of dried ginger
1 piece brown cardamom
Jayatri a little bit
1/2 teaspoon coriander seeds
2-3 cloves
2-3 green cardamoms
A little bit of nutmeg
For gravy:
1 tablespoon ghee
1 bay leaf
1/2 teaspoon cumin
1 tablespoon ginger-garlic paste
2 tablespoons chopped onion
3 raw chillies
1 teaspoon turmeric powder
1 teaspoon cumin powder
1 teaspoon coriander powder
1 tablespoon dried chilli powder
Salt to taste
Water
150 grams of tomato puree
A pinch of sugar
2 tablespoons cashew nut paste
1 1/2 tablespoons cream
1/2 lemon
Method
In a pan, add shallow fried ghee, button mushrooms, salt and butter. Transfer the fried mushrooms to a bowl and set aside.
Dry all the ingredients in a pan for 2-3 minutes.
Put ghee, bay leaves, cumin, ginger-garlic paste and onion in the pan. Add raw chilli.
Add turmeric powder, cumin paste, coriander powder, dried chilli powder and salt to taste. Add tomato puree and a little sugar to the mixture. Then add cashew nut paste, hot spices, cream and lemon juice one by one. Add the fried button mushrooms.
Mix the mushrooms and the mixture well. Let it cook for a while. Shahi mushrooms are ready to serve.
